EATING TO LOSE

To start my change of diet, our Lord Jesus put me on a three day fast, with nothing but water. But don’t do this unless led by the Lord. But yet, you’ll lose by eating good foods. Now step on your scale to see how much you weigh.

It is better in the morning, just before your shower. You’ll be lighter in that hour.

Next divide your weight by half. this is the amount, in ounces, of water, you’ll drink every day. Your body needs this to do its job. Remember all the good times at restaurants? Well, those days are over. Its time to trust our Lord Jesus, to give you the strength to help you through each day to eat the right foods. It is important to take good vitamins, such as a daily vitamin, Vitamin C, Calcium Magnesium, Garlic. You take the Calcium Magnesium at bedtime as it helps you fall asleep. You may also know of other vitamins you need. Zinc is very good also, especially if you have a cold or sore throat. Just suck on a tablet two or three times a day. Zinc is an immune system builder. I’m not a doctor. It is ultimately up to you what vitamins and minerals you take. What I have just listed is what I used to help me lose 90 pounds. Now it is time to visit a natural foods store. Traverse City has Oryana’s Food Coop and Edson Farms. If you are interested, we have found a natural foods warehouse downstate in Pullman.(CountryLife). It is actually a Seventh Day Adventist Community. If you know anything about Seventh Day Adventists, they are very big on eating naturally for good health. They have a catalog and will deliver if you have a $300 order. When bought in bulk, most items are just as cheap, if not cheaper, than buying similar items in a grocery store. We like to drive down there because they have a small store that carries items not listed in their magazine. If you like, just call us and we can pick up any order for you. Getting back to natural foods, you will need grains, legumes, millet, oatmeal (or rolled oats), Brown rice, buckwheat, stone ground whole wheat, split peas, pinto beans, tofu, and whatever else you may like. Try to buy ORGANIC if at all possible. And don’t forget to use cold pressed olive oil. We buy our oil from Sam’s Club. Everything else we buy from CountryLife In Pullman. We also buy seven grain cereals, various types of granola, a milk substitute that even our kids are drinking. And all of this stuff we buy in 25# bags at a cost cheaper than in grocery stores. There are also different types of oils. You can buy 100% pure pressed canola oil, sunflower oil, etc. We use olive oil, though, and lots of it, for our stir fry vegetables. If you should burn the oil, remove the black stuff, or start all over. Don’t eat anything that is burned in olive oil. The burnt oil puts free radicals in your bodies and we all know what nasty things those free radicals are. Better to be a democrat than a free radical. (that is a joke.) When we have millet, oatmeal, or cream of wheat for breakfast, I put the olive oil in it, and nothing else. My hubby and kids don’t like it, though. I scramble two or three eggs in one tablespoon of olive oil, seasoned with sea salt. And I also have buckwheat pancakes with nothing else on them. I alternate my meals every three days.

Don’t faint on me now, girls and guys. Remember, I told you to trust our Lord Jesus to give you the strength to eat the right foods. Well, right at the beginning of this diet, sugar is out. Look at the ingredient labels on your foods. If it has sucrose, sugar, corn syrup, or caramel color, don’t buy it. Just as the devil has many names, so does sugar. All pop is out also. It is time to give up coffee and kool aids. the most important beverage you will be drinking will be WATER...WATER...WATER! Stay away from shortenings and oils you buy in grocery stores. these are not good for you. If you are trying to lose lots of weight, like I did, stay away from yeast breads and dairy foods. I found by making buckwheat pancakes, or stone ground whole wheat pancakes, I can use the pancakes as bread for sandwiches. To get used to stone ground whole wheat flour, start out with half whole wheat and half unbleached unenriched flour. You may have trouble finding unbleached unenriched flour in your grocery stores. We special order ours from Gordons. Just call them up and it will be here in 2-4 days. It comes in 50# bags for around $13. This is actually cheaper than buying 5# bags in grocery stores. We buy all our foods in bulk because of our large family. Your body needs the whole wheat. We also eat lots of soup. Following are some of the meats that we eat; Chicken, turkey, duck (if you or someone you know hunts), venison and fish. We don’t eat cow or pig meat. (beef and pork for all you politically correct people). I stir fry frozen vegetables or fresh. We NEVER eat canned vegetables, except tomatoes. But make sure no sugars are added. Always check your labels. Make sure there is no monosodium glutamates. MS is even worse than those bad free radicals. It is used as a preservative and it will kill your brain cells.

Learn to bake without using sugars. You can substitute applesauce or pumpkin, and different spices.

Following are some of the recipes that you may find helpful.

 


BLENDER MAYONNAISE

  • 2 eggs
  • 2 Tbsp fresh squeezed lemon juice (optional)
  • 1/4th cup sea salt
  • 1 1/4th cup unrefined canola oil

Combine all ingredients, except oil, in blender. Mix at high speed for one minute, then slowly add oil. Store in a glass jar. Refrigerate it for up to 5 days. Because you will use no preservatives, foods won’t store for long periods. \

 


BETTER BUTTER

  • 1 stick butter
  • 1/2 cup canola, or sunflower, oil

Blend for a short time, just long enough for the butter to get blended in.

 


RITA’S GOD GIVEN BREAD ...3 LOAVES

  • 3 cups warm water
  • 1 Tbsp. instant red star yeast
  • 1 Tbsp. sea salt (or less)
  • 1/2 cup cold pressed olive oil

Mix these together then add

  • 5 cups unbleached flour
  • 4 cups stone ground whole wheat flour

Mix in a heavy duty mixer, using a dough hook. A dough hook does the best job. But you can kneed by hand if you like. Kneed about 5 minutes by machine or 10 minutes by hand

Let rise 45 minutes in a greased bowl. I use Crisco shortening. I know I said earlier to stay away from shortening, but it is ok to use it for bread making. But that is all. But use the shortening only for the bowl and patting on the bread loaves.

Return the dough to mixer after letting it rise 45 minutes and kneed two or three more minutes. Divide bread dough into three equal groups. Shape into loaves, then brush or rub on the Crisco. Put your Crisco away for now.

Let rise an additional 25 minutes, or longer, in a warm place, But don’t let it rise too long.

Heat oven about 10 minutes to 375 degrees and place loaves in oven for 25 minutes to bake.

You will know they are done when they are lightly browned. You can also tap the loaves with your hand, listening for a hollow sound. Mine are always done within 25 minutes.

Take out of the oven and place on a cooling rack. If you have kids around ( or a hubby) , expect one of the loaves to disappear within 3 minutes.

When completely cooled, use an electric knife to slice. Place into plastic bags and freeze. Don’t refrigerate because this dries the bread out faster. Because you didn’t use any of those bad preservatives, a loaf will only last 3-4 days on the shelf.

May our Lord Jesus be with you, helping you with your change of diet, eating the way God intended for us to eat. You will find it a better way of life.

So far on this change of diet, I have lost 90 pounds in 6 months! I pray for the best for you also.

 


PAPA'S PEOPLE PLEASIN PECAN POULTRY PATTIES

  • 1 lb ground chicken or turkey

  • 2 cups TVP

  • 1 1/2 cups pecan meal

  • 1 1/2 cup hot water

  • 1 cup minced onion

  • 1 cup whole wheat flour

  • 1/2 cup grated celery

  • 1/2 cup grated carrots

  • 1/4 cup parsley

  • 1 TBSP ground ginger

  • 1 TSP sea salt

  • 1 TSP garlic powder

  • 1 TSP oregano

Combine TVP and hot water. Let it sit for 10 minutes. Make sure you are listening to Rush or Michael Reagan on the radio. Add all the other ingredients and mix well in a mixer. Press into patties.

*(Shape patties into the shape of any fur bearing animal. this will drive and P.E.T.A people nuts.)

Heat in a skillet for 10 minutes, or until browned. Serve in your home made buns made from the beforementioned bread recipe.

The TVP and pecan meal can be purchased from Country Life in Pullman, MI and most grocery stores carry the ground chicken or turkey in their frozen foods department.
